A little bit sweet, a little bit spicy and overall delish, this Blackened Chicken recipe is a must-try for your next meal!

Since getting married, my go-to recipe for cooking chicken breast has always been the good, old baked one. Most of the times, I just add olive oil, white onion rings, salt, pepper, and from time to time, a splash of balsamic vinegar.

However, these past few weeks, I find myself getting bored with it. So, I look up Pinterest and YouTube for some inspiration and found an interesting recipe – blackened chicken.

I haven’t had blackened chicken before so I decided to try it. But first thing first – a good blackened seasoning mix!

I did a quick Google search to find the best blackened seasoning mix and found this wonderful recipe from this blog.

I customized the recipe to adjust to whatever spices I have on-hand and this is what I came up with:

How to make blackened chicken

The process of making blackened chicken is very easy. It made me wonder why it took me so long to make this.

Step 1. Add about a tablespoon of olive oil on a pan and heat it under medium to high heat. I started mine in high heat and turned it down once I started cooking the chicken.

Step 2. Pat your chicken slices with paper towels and season them with the blackened spice mix. I enjoy eating flavorful chicken breast so I put a lot of blackened seasoning on the meat (feel free to cut back on the amount of seasoning if it’s too much for you).

Step 3. Once the pan is hot enough, sear the seasoned chicken for 2-3 minutes/side. This is very important. Your pan should be hot enough before you pan fry your chicken slices.

Step 4. Bake at 400F for 5 minutes. Check for doneness by using a food thermometer. I used thinly sliced chicken breasts for this recipe so by the time I place them in the oven, they’re almost done.

What to serve with blackened chicken

This blackened chicken goes well with starchy veggies like potatoes and corn. It also goes well with cruciferous vegetables like broccoli, cauliflower, and brussels sprouts.

  • Pre-heat your oven at 400 degrees Fahrenheit.
  • Place olive oil on medium-sized pan and heat it over medium to high heat.
  • While waiting for the pan to get hot, prepare your chicken. Pat dry your chicken to remove the excess moisture.
  • Slather the chicken slices with the blackening spice mix.
  • Once the pan is already hot, sear the chicken for about 2-3 minutes/side.
  • Transfer to the oven and bake at 400F for 5-7 minutes. Check for doneness by using a food thermometer (internal temperature should be 165F).
